1) Beef Satay Salad
Ingredients
2 Sirloin steaks, about 225 g/8 oz each , trimmed of any visible fat
2 tbsp of soy sauce
1 tbsp lime juice
1 garlic clove, crushed
1 tbsp dried chilli flakes
350 g/12 oz Chinese leaves, shredded
1/4 cucumber , thinly sliced.
4 spring onions,sliced
fresh corainder leaves and sliced red chilli pepper, or garnish
lime wedges to serve
Satay Dressing:
2 tbsp crunchy peanut butter
3 tbsp coconut milk
1 tbsp soy sauce
1 tbsp lime juice
2 tbsp soft brown sugar
2 tbsp of soy sauce
1 tbsp lime juice
1 garlic clove, crushed
1 tbsp dried chilli flakes
350 g/12 oz Chinese leaves, shredded
1/4 cucumber , thinly sliced.

Satay Dressing:

Procedures
- Place the steak in a shallow dish. Mix together the soy sauce.,lime juice , garlic and chill flakes and pour over the steaks, Cover and leave to marinate at room temperature for 1 hour.
- Heat a cast -iron griddle pan until very hot. Add the steaks and cook for 3 to 5 minutes on each side,depending on how well done you like your steak, transfer the steaks to a plate and cover and leave to rest for 5 minutes.
- To make the satay for dressing, place all the ingredients in a small saucepan and heat gently, stirring all the timem until the peanut butter has melted. Simmer for 1 minute, If the dressing becomes too thick add a little water and stir well to make a pouring consistency.
- Mix together the chinese leaves , cucumber and spring onions and place on a serving platter. Thinly , slice the steaks and arrange on top of the salad. Drizzle over the satay dressing and garnish with coriander leaves and chilli pepper. Server with lime wedges.
